How to Store Spices and Herbs so They Last Longer

Category: Kitchen Tips / Spice Guide

Have you ever reached into your kitchen cabinet, opened a jar of cumin or paprika, and noticed it lost its bright colour and smell?

Spices do not usually spoil or go bad in a way that makes you sick. However, they do lose their flavour, aroma, and health benefits over time. If your spices lose their strength, your cooking loses its delicious taste!

To keep your ingredients fresh and full of flavour, follow these four simple kitchen storage rules.

1. Avoid Heat and Light

Many people store their spice jars right next to the stove or on top of the microwave for easy access. This is a mistake! Heat and direct sunlight break down the chemical oils that give spices their unique taste.

  • The Fix: Store your spice jars inside a dark pantry, a closed drawer, or a kitchen cabinet away from the oven.

2. Keep Moisture Out

Moisture is the biggest enemy of dry powders. When steam gets inside a spice jar, it causes the powder to clump up. In worst cases, it can even cause mould to grow.

  • The Fix: Never hold an open spice jar directly over a steaming pot of food while cooking. Instead, use a dry spoon to scoop out the amount you need. Always make sure the lid is closed tightly immediately after use.

3. Use the Right Storage Containers

Glass jars and airtight tin containers are excellent for holding spices. They create a strong barrier that keeps air out and seals the aromatic oils inside. Avoid keeping your ingredients in open plastic packets for too long once you buy them.

4. Know When to Replace Them

As a general rule, ground spices (like turmeric, chili powder, and ginger) stay at peak freshness for about 1 to 2 years. Whole spices (like whole pepper, cardamom pods, and cumin seeds) can last much longer—up to 3 or 4 years.

Start with Fresh Ingredients

No matter how well you store them, old or low-quality ingredients will never taste great. If your kitchen cabinet is full of jars that have been sitting there for years, it is time for an upgrade.
